FreshMex, Scotland’s favourite Tex-Mex brand, is expanding and looking for a passionate and creative Marketing Manager to join our team! With two vibrant restaurants in Edinburgh and Aberdeen, and a growing presence in major supermarkets across the country, we need someone who can take the lead on marketing strategy and drive growth across both our restaurant and retail businesses.


About the Role:

As our new Marketing Manager, you will be responsible for developing and executing innovative marketing strategies to grow FreshMex’s brand presence and sales across both our restaurant locations and retail product lines. This is a unique opportunity to take ownership of a diverse range of marketing activities, working closely with our leadership team to shape the future of FreshMex.

This is a permanent, full-time role. This is a hybrid role with an expectation of being in the Edinburgh office 2 days a week and the option to work from home 3 days per week.


You’ll be involved in:

  • Marketing Strategy & Planning: Design and implement marketing campaigns for both our restaurants and retail products, ensuring cohesive messaging and brand identity. You will be leading all Marketing Campaigns to attract, retain and reactivate customers across all forms of digital and print media.
  • Brand Growth: Develop initiatives to increase brand awareness and customer engagement across all platforms—digital, social media, in-store promotions, and more.
  • Collaborations & Partnerships: Work with partners like supermarket chains, influencers, and community events to boost the profile of our retail products and restaurants.
  • Campaign Management: Plan, execute, and analyse marketing campaigns, both online and offline, to drive footfall to our restaurants and improve product visibility on retail shelves. You’ll be taking ownership of the end-to-end campaign plan, inspiring others to work with you to deliver across all phases from inspiration, brief, co-ordination, execution and review.
  • Content Creation & Management: Oversee the creation of compelling content, including social media posts, newsletters, and promotional materials.
  • Customer Insights & Analytics: You will be responsible for setting KPIs, analysing market trends, gathering and reviewing customer feedback, and sales data to inform and optimise marketing efforts.
  • General business support: To undertake all activity as required by the founder or management team to ensure the smooth running of the business. To actively promote best practice within safe and legal working operations. To play a key leadership role in keeping yourself and others up to date, specifically within Trading Standards and GDPR.


What We’re Looking For:

  • Marketing Experience: 2-3 years’ experience in a marketing role, ideally with exposure to both hospitality/restaurant businesses and retail products.
  • Strategic Mindset: Ability to create and execute well-rounded marketing strategies with a balance of creativity and data-driven insight.
  • Self-Starter: Comfortable taking ownership of projects and working independently to meet goals. You will have a great deal of autonomy to forge new ideas and use your expertise to bring about fast-paced change. The role is hands-on and will require experience and enthusiasm across all aspects of the marketing mix.
  • Digital & Social Media Savvy: Strong experience managing digital marketing campaigns and using social media to engage with audiences. Experience of marketing software such as Adobe Photoshop/InDesign/Hootsuite/Mailchimp/Klavyio/Canva and an appreciation of the importance of SEO. Basic photography skills are essential.
  • Trade Marketing Awareness: An appreciation of the retail environment, with experience of producing compelling trade marketing communications and point of sale to share our point of difference and influence customer behaviour to drive sales.
  • Communication Skills: Excellent written and verbal communication skills, with the ability to craft messages that resonate with a wide variety of audiences.
  • Creative Thinker: A flair for coming up with new ideas to keep our brand fresh and exciting in both the restaurant and retail space.
  • Managing budgets: We want to harness your skills and experience of managing budgets to enable maximum impact at a fast pace.
  • Strong time-management skills: Able to manage multiple projects and meet tight deadlines – someone who thrives in a fast-paced environment and is able to prioritise.
  • All applicants must hold a full UK driving license.
