Ideal Profile;
- A passionate Chef de cuisine/ Senior Sous chef who loves working with great ingredients
- Team player
- Experience in a similar role and a busy environment.
- Proven 2AA background
- Basic computer skills.
- Flexible with work hours, including weekends, early, and late shifts.
- Committed to delivering 'Iconic', 'Individual', and 'Intuitive' service.
Responsibilities;
Second in command of the entire kitchen team, overseeing chefs in both the main kitchen and banqueting kitchenWork with a British Classic Menu, influenced by locally sourced produceResponsible for delivering 2 AA Rosette standard food across multiple outlets:- Restaurant
- Lounge and Bar
- Terrace
- Room Service
- Conference and function rooms
- Support the Executive Chef in preparing food budgets and achieving targets for food sales, average spend, profit margins, and operating expenses
- Manage, engage, and develop the kitchen team while ensuring consistent adherence to food hygiene standards
- Menu design, costing, training, and execution, requiring creativity and comprehensive culinary knowledge
- Assist the Executive Chef in overall kitchen management, including:
- Stock take
- Food controls and storage
- Maintaining cleanliness and organization
- Deputise for the Executive Chef during their absence
- Attend daily and weekly meetings, monitor budgets, and participate in profit and loss reviews
